Not all chocolate is created equal. The potential health benefits of processed, highly sweetened chocolate are slim to none, but the health benefits of dark chocolate are numerous and quite impressive. Dark chocolate is loaded with antioxidants, including flavonoids and polyphenols, which help lower inflammation and fight disease.
Dark chocolate is high in iron, magnesium, manganese and copper.
This is one of my favorite recipes to make even for people who don’t like to eat healthy. Just don’t tell them….they will never know!
raw cacao cheesecake recipe
crust:
2 cups raw almonds
1/2 cup fresh medjool dates or other dried fruit
Pinch of sea salt
In a food processor, grind the almonds until finely ground. Add the dates or dried fruit and salt. Grind together until the mixture starts to clump together and form a ball. If it does not clump, add 1/2 teaspoon of water and mix again.
Put in the bottom of 8 inch springform pan and press down firmly to form the crust.
Filling:
2 cups raw cashews
2/3 cup maple syrup
1 cup water
3 Medjool dates, pitted
1/2 or 2/3 cup raw cacao powder, depending on how dark you like it
1 Tablespoon vanilla extract
1/8 teaspoon of sea salt
1/2 cup melted coconut oil, unrefined
Blend the cashews, maple syrup, water, dates, salt, and vanilla in a high speed blender until smooth. Add the raw cacao and coconut oil and blend to incorporate.
Pour over the crust and set in the freezer for 2-4 hours, then the refrigerator for 4-8 hours.
