Looking for an inexpensive, meatless meal?  I am starting a new series called, Meatless Mondays.  Every Monday, I will share one of my favorite meatless recipes that will help you save money on your grocery bills and help you eat healthier.   Sound good?  Read on because you will love this recipe…

These black bean burgers are a delicious blend of spices and quinoa that will be a hit, no matter who you make them for.  Enjoy!

  • 2 cups cooked black beans
  • 1/2 cup cooked quinoa*
  • 1/3 cup flaxseed meal, freshly ground is best
  • 1/2 of a red bell pepper
  • 1/4 of an onion
  • 2 garlic cloves
  • 1 1/2 tsp. cumin
  • 1/2 tsp. sea salt
  • 1 tsp. hot pepper sauce
  • 1 egg
  • 1/4 cup chopped cilantro, optional

Place the red bell pepper, onion, and garlic in a food processor and process until minced.  Add remaining ingredients and pulse about 6-8 times to combine.  Form mixture into patties.  Heat 2 tablespoons of olive oil in a large skillet over medium heat and cook the patties for about 3-4 minutes per side. 

These are delicious with sliced avocado. 

Makes about 6-8 patties. 


*Note: To cook quinoa,  rinse the quinoa under running water, until the water runs clear.  Put 1 part quinoa and 2 parts water in a saucepan.  Bring the quinoa and water to a boil. Reduce heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes.
